It's the first month of the year and most importantly, it's Veganuary!! At Swim by Alba, we first turned Vegan for September in 2019, after witnessing the horrific Amazon Rainforest crisis. Animal agriculture is the leading cause for global deforestation and adjusting your diet is the single, biggest solution because less demand = less deforestation. We have never looked back and since then we've enjoyed sharing many recipes with you, including: roasted veg + tofu tray bake, french toast, sweet potato hash browns.


This week we made the most delicious banana bread which so many of you have asked us to share, so enjoy!


Ingredients:

4 ripe bananas

250g self raising flour

50g brown sugar

50g sunflower/vegetable oil

2 tbsp chia seeds

2 tbsp goji berries

2 tbsp cacao nibs

2 tsp cinnamon

2 tsp baking powder


  1. Pre-heat oven to 180°C

  2. Mash up the bananas in a bowl with a fork until it's all smooth

  3. Add your flour, brown sugar, sunflower oil, baking powder, cinnamon and chia seeds into the bowl and get mixing

  4. Once everything is well mixed, add your goji berries too

  5. Spray some olive oil to your tray, or you can use baking non-stick paper or grease the tray with a brush

  6. Pour the mixture into the tray and sprinkle the cacao nibs on top

  7. Pop it in the oven for around 20 mins, then rotate and put in for another 15-20 mins

  8. When it's ready, take it out and let it cool down by covering it with a clean tea towel

  9. After 10 minutes or so tuck in, it goes perfectly with a Teapigs Detox tea!
